Meet Chef Patron Azam
From my early days in Kandy, Sri Lanka, cricket was my first love. But life had other plans and along the way I discovered my true calling – food. What began as a simple curiosity for great cuts of meat soon grew into a full-blown obsession with quality.
I became self-taught, mastering everything from sourcing the finest produce to the delicate craft of butchery and the precise art of dry-aging. The journey hasn’t been without its setbacks. Failures, challenges and rebuilding taught me resilience the hard way – lessons that shaped not just my cooking, but my character.
It was at The Clubhouse that I first brought together my passions for food, cricket and community. That seed of a vision has since flourished into Aged Steakhouse – my pride, my passion and my platform to share craft, honesty and experience on every plate.
Today, I’m humbled to be recognised as the “Dry-Aged Steak Guy” not only in the UK, but across Europe and beyond. Yet for me, it’s never just been about steak – it’s about creating something that resonates far deeper.
This is my journey, and it’s still only the beginning. I look forward to welcoming you to Aged Steakhouse.
